Recipe to follow on the weekend...so this is it:

1. Wash and cut up 4 stalks of rhubarb, 3 baskets of strawberries- I left some berries whole for the top.
2. Prep zest from 1 orange and Scrape 1 vanilla bean.
3. Add 1/2 cup rum, 1/4 cup orange juice and 3/4 cup sugar together - add zest and vanilla - add 2 tbsp agar agar and gently heat to a boil, stirring until it just comes to a boil. Stir into berries.
4. Line your tart pan (I used a 14 inch pan) with your choice of crust - anything goes!
5. Fill tart. Bake at 350 degrees 45-50 minutes.
6. Cool and decorate or serve with your choice of nut kreme.
