Perfect for a Labor Day Picnic.
* 1 tablespoon Olive Oil
* 2 cups Chayote Squash, shreaded
* 2 tablespoons Rice Vinegar
* 6 tablespoons EVOO
* 1 teaspoon Cilantro chopped
* 1/2 cup Roasted Red Peppers, diced
* 1/2 pineapple, diced
* 3 tbsp Pepitos
* 2 tablespoons Cumin Seed
* 1 1/2 tablespoons Whole Black Peppercorn
* 2 teaspoons Coriander Seeds
* 1 tablespoon Agave
* 3/4 teaspoon Sea Salt
Saute the squash in 1 tsp EVOO about 2 minutes, cool and add the cilantro, peppers and pineapple. Grind the spices and mix with the rest of the EVOO, agave and vinegar. Pour over the slaw and toss with pepitos.
