Chinese Pork Meatball Soup

This soup is very easy to make and delicious as well. It is made by my mom and documented by me.
Ingredients:
1 pound ground pork
1 egg
1/2 bunch parsley leaves, chopped
2 tablespoons minced fresh ginger
3 tablespoons soy sauce
1 teaspoon salt
1 teaspoon sugar
2 pounds ash guard, cut into 1 inch cubes
1 teaspoon salt
7 cups water
Directions
1. combine ground pork, egg, salt, sugar, soy sauce and ginger in a large bowl. stir till well mixed and sticky.
2. bring water, ash guard, salt to a boil in a large stock pot. reduce heat to medium and simmer for 4-5 minutes. Take 1 tablespoon of the pork mixture and gently drop it into the soup. simmer 7 - 8 minutes more till meatballs cooked.
You can also added onion to the meatball mixture as well and replace parsley with spinach or other favorite veggies.
