I can not describe how delicious this is. I have been on curry overload lately.

I made the lentils in the pressure cooker and added the potatoes and carrots to the lentils so that the overall dish would cook quicker. Just 4 minutes on high pressure!

In pressure cooker, sauté some onions garlic and shallots. When they are semi soft, add lentils and carrots and potatoes with about three cups of water (2 cups of lentils). High pressure for 4 minutes and then let it de-pressurize for for about 10 minutes.

Meantime, sautee another onion in a very large pan. Add fried tofu, savory baked tofu and green peas. Pour in the lentil mixture when it's done and add four heaping tablespoons of your favorite curry powder.

This is served over brown rice.
