Chinese Stir fried Potato slices

This is a real simple chinese vegetarian dish. It is so simple the hardest part is to slice the potato :)
Ingredients:
Potatoes: 400 g (or 2 medium sized ones)
green onion: one. finely chopped.
Onion: 70 g (or 1 small sized one) Optional
Garlic: 2, thin sliced.
Seasonings:
Salt: 1/2 teaspoon
Pepper powder: 1/4 teaspoon
Vegetable oil: 80 g
Chinese vinger: 2 tablespoons. Optional
dried red pepper: one. cut it into small pieces. Optional
Preparation:
Remove the outer skin of the onion and mince it;
Peel potatoes and Cut them into thin slice (about 1/8 inch thick, the thinner the easier to cook).
This is the key point: Save potato slices into a pot filled with water and rinse it - this is to remove starch. Otherwise the cooked dish will become really thick and gets stuck to the bottom of the wok.
Cooking steps:
Heat a wok or skillet on medium hight heat. Add the oil.
When the oil is hot, add dried red pepper and let it go brown.
Add chopped green onions and saute for 10-20 seconds.
Add potato slices and stir fry.
Stir in the salt and pepper power.
cook for 5 minutes or until the potato firms up and gets brown.
Added vinger to your taste. (my mom likes the slightly sour and crispy taste)
Serve immediately.
