Delicious comfort food.

Mashed potatoes: Cut Yukon gold potatoes into fairly even sized pieces. Boil in salted water for 12-15 minutes, until knife tender. Force through a potato ricer or use a potato masher to creme potatoes. Add lots of butter and more salt and pepper than you'd think necessary.

Fired Corn: Cut corn off cob. In frying pan, on med-high heat, fry corn stirring frequently for 20-25 minutes. Add some salt to help the frying. I add some onion and red pepper for color.

The friend chick'n is Gardein brand. If you haven't tried them, try them now. Delicious products, just the right texture.
