So here it is…I was working on another cupcake today and had left over batter…so, what about brunch?
I cooked the batter in a cast iron pan and viola! Another griddlecake! This time I diced some ripe Seckle pears and tucked them inside like an ohmlette. But that wasn’t the kicker. I seasoned the pan with Earth Balance, ginger, and raw sugar first and allowed it to caramelize before I poured the batter. Crunchy good!
A little almond kreme on top - a feast for two!
