home made chalupa! i also made refried beans, which are WAY better than the canned junk you get at the store.
refried beans:
cook the beans as usual, but add a bit of garlic, cumin, and salt. i used black beans, but you can use pintos if you like. after they're done, heat a few tablespoons of oil in a heavy pan over med-high. add the beans in small batches, mash them, and stir constantly. after cooking for 2-3 minutes, add the next batch. when all of the beans are added, mix in some of the liquid from the beans, stirring really well. turn off the heat and adjust the liquid as needed to get the texture you want. i'd leave them a bit wet as they dry out fast when they cool.
for the bread:
it's basically a bathura or native american fry bread. mix 1 cup of flour with half TBS baking powder and 1/2 cup of milk. knead till smooth. shape into a disk (about 1/4 inch thick) and fry in 2" of vegetable oil until golden and puffy.
to assemble the chalupa: spread beans on the fried bread, then top with your choice of toppings. i used lettuce, tomatoes, black olives, guacamole, salsa, and cheese.
