Veg Hungarian Goulash

3 large onions
1/3 cup good grade paprika
2 packages Gardein beefless tips
1 can tomato paste
8 small potatoes
2 bay leaves
little water
4 carrots
olive oil
salt
pepper
Saute onions in some olive oil until soft. In a food processor, blend paprika, salt, pepper and tomato paste completely. Add this to the onions and mix well. Add carrots and Gardein protein and just a little bit of vegetable stock or water. Cook on low or in oven for an hour or more. Serve over boiled potatoes.
I can't express how yummy this was. The delicate flavor of the paprika was just perfect and set off beautifully by the onions and potatoes.
