Brown rice and carrots with roasted brussels sprouts and fried tofu

The brown rice and carrots were wonderful as would be expected. 1 cup of brown rice and two cups of boiling water in a pressure cooker for 19 minutes + 5 off heat and you're done! I add some oil to start and sautee my brown rice to give it a wonderful nutty flavor.
The roasted Brussels Sprouts might not look that good but were delicious. Toss cut sprouts with salt, pepper and olive oil. Into an oven set at 400 for 35 minutes. Sweet and delicious.
The tofu I didn't care very much for but only because it was "fish fry" type breading instead of the more typical corn starch that I use usually.
