My little contribution to FAST this month were S'More Squares from Flo Braker's Sweet Miniatures. I made a few modifications to the methods, including pre-cutting the squares before putting on the topping (as I knew the tops would crack if I were to cut after the chocolate had cooled). I covered the tops of each square completely with melted 70% dark chocolate (3oz) instead of a drizzle of milk chocolate (2oz). The modified recipe is below.
S'More Squares
(makes 3 dozen)
Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup light brown sugar, packed
7 tablespoons unsalted butter, melted
For the chocolate cake/brownie layer:
2/3 cup all purpose flour
1/4 teaspoon salt
1/8 teaspoon baking soda
2 ounces 70% dark chocolate, chopped
6 tablespoons unsalted butter
1 tablespoon water
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
For the topping:
3 ounces 70% dark chocolate, melted
3 dozen mini marshmallows
Instructions
1. Preheat oven to 325F. Press a sheet of aluminum foil to cover a 9-inch square pan. Butter the sides walls of the aluminum foil lined pan.
2. In a large bowl, mix the graham cracker crumbs with the sugar. Add the butter and blend thoroughly. Press the crumbs into foil-lined pan; set aside.
3. Sift the flour, salt and baking soda together; set aside.
4. In a bain marie, melt the chocolate and butter, stirring occasionally. Take mixture off the heat, and stir in the water.
5. Pour the dry mixture into the liquid mixture, stirring just until combined. Pour filling into crumb-lined pan, spreading evenly.
6. Bake for 30 minutes. Remove pan from oven to a rack and cool in the pan.
7. Remove the cake from the pan to a cutting board; cut into 1 1/2-inch squares.
8. Spread the melted chocolate over the filling's surface. Center a mini marshmallow on each square. Allow chocolate top to solidify.
Squares are good at room temperature for up to 2 days.
