Gardein and Diaya Quesadilla with Black Beans and Refried Beans

Quesadilla was delicious.
Heat a large skillet up with 1/2 teaspoon vegetable oil until oil simmers. Place in the skillet 1 flour tortilla. Scatter a hand full of Diaya vegan cheese, a hand full of rinsed black beans and a hand full of prefried Gardein chicken scalloppini "cubed". Put another flour tortilla on top of all of that and press the two together for a minute or two (until the bottom tortilla starts to get brown/black). Flip the quesadilla over and let the other side get brown/black (about 3 mins), allowing the cheese to melt and hold everything together.
Serve with refried beans or Mexican rice or just about anything really. I cut mine into 8 pieces. One sandwich is more than enough for 1 person.
