Vegan Chick'n Scallopini with roasted brussels srpouts and white rice with mushroom gravy

To roast the brussels srpouts:
cut sprouts in half and cut off bottom stem. Add to a mixing boil and drizzle 1/3 cup olive oil on top. Add 1/4 teapsoon sea salt and 1/4 teaspoon fresh ground pepper. Add 1/8 tspn garlic powder and 1/8 tspn onion powder. Spread onto a baking sheet and bake at 400 for 30 minutes or until about 40% caramelized.
For Chick'n Scallopini:
1 pkg Gardein Chick'n Scallopini, thawed. Dredge in corn starch and corn meal mixture. Fry in vegetable oil until crispy.
