What a great meal.

Vegan Cheesy Rice Casserole:

1 pkg daiya cheese
3 cups cooked rice
broccoli
kidney beans
Gardein chick'n
carrots
flour
Earth Balance
Almond milk

Precook your rice so it can be cooled down to make the dish.

Start by steaming some carrots for 5 mins and then toss in the broccoli for just a minute or so.

In a sauce pan, melt 3 tablespoons earth balance, add salt, pepper and then 2.5 tablespoons flour. Stir to combine and then cook on med for a few mins to cook off the raw flour taste. Gradually add 4 cups of almond milk, stirring constantly to prevent lumps. Turn heat up and bring to a boil, stirring almost constantly. When boil is reached, stir for 1 min and then turn off heat. Add cheese and stir to combine.

Preheat oven to 400

Line a 9x12 hot dish pan with a layer of rice. Evenly arrange broccoli, beans, gardein chick'n and carrots in the pan. Add the rest of the rice to cover the veggie layer. Pour cheesy sauce over all, allowing it to soak into the rice.

Bake covered for 45 mins, uncover and bake another 20. Let stand for 10 mins before serving.
