Rubbed a (piece of) pork shoulder with a variation on "Southern Succor Pork Rub":

1/4 cup coarsly ground black pepper
1/4 cup sweet and sour smoked Spanish paprika *)
1/4 cup cane sugar
2 T coarse seasalt
2 t kona karashi (Japanese mustard powder)
1 t cayennepepper

I let that marinate in a plastic bag in the refrigerator overnight.
Then I chopped up an apple, half an onion and 3 spring onions and put it in a baking dish.
Added the pork. Rubbed a little bit more rub on top. Added 1/2 cup of Shaoxing ricewine, covered the dish with alu-foil and put it in a 175C oven for 5 (not sure yet) hours.

(I just don't have a bbq-smoker, recplaced the plain paprika with smoked paprika, didn't have applejuice so used an apple, was almost out of onion so used spring onion and was also out of whiskey (which I didn't know until I wanted to add it!) so used Shaoxing. Anyway, it's not much like the original recipe anymore, but I still hope it will turn out nice. ;-)


*) Next time I think I would take 2/3 regular paprika and 1/3 smoked paprika.
