With cream cheese on wheat toast. I dream fondly of summer to come.
Oven Strawberry Jam (adapted from Nigella Lawson's hands-free raspberry jam)
1 cup white sugar
1 dry pint strawberries, chopped
2-3 Tbsp red wine (or balsamic vinegar or lemon juice, you need a little liquid and acidity)
1 tsp of fresh-ground black pepper (optional)
Preheat oven to 350 degrees
Toss the chopped berries with the liquid (you can add more if the berries themselves are a little dry) and put them in a pie dish and the pie dish in the oven for a 10 minute head start. Then dump the sugar in another oven-proof dish and pop in the oven for a further 25 minutes.
Once the time is up, carefully remove the dishes from the oven and pour the hot sugar over the berries and stir thoroughly the a wooden spoon. Stir in the pepper, if using, and scrape the sticky, ruby red goo into a clean jar. Let cool completely before eating or storing. Should keep about a month in the fridge.
