Just made this one up on the fly. Some of the measurements are aproximations.
1 tbs olive oil
1 medium onion, diced
3 cloves of garlic, chopped
1 14.5 oz diced tomatoes
1 cup white wine
Salt and pepper to taste
1 turkey kielbasa, cut into 1/4 inch pieces
1 cup frozen corn
2 cups frozen green beans
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp red pepper flakes
Heat the olive oil in a medium pan over medium heat. Add the onions and saute for 5 minutes, add the garlic and saute for another five minutes.
Add the tomatoes (undrained) and the wine, bring to a boil, reduce heat and simmer for 5 minutes.
Add the corn, green beans and kielbasa. Add a pinch of salt and a few grinds of pepper. Bring to a boil, then reduce the heat to low, cover and simmer for 10-12 minutes, stirring about half-way thru.
Remove the cover, add the oregano, thyme, red pepper flakes and some more salt and pepper if desired. Bring to a boil and reduce the liquid to a desired level, 5 -10 minutes.
Remove from heat and let it sit for about 5 minutes before serving.
With 1/2 tsp of pepper flakes, this is medium hot, you can add more or leave the pepper flakes out. While I didn't add cheese at the end, it wouldn't be a bad idea.
