2 lbs chicken, cut into bite-sized pieces
1 tbs olive oil
2 cloves garlic, minced
1 medium-sized onion, diced
1 can (14.5 oz) diced tomatoes with green chiles
7 or 8 small red potatoes, quarted
1 cup baby carrots, larger pieces cut in half
3 tbs soy sauce
1/4 cup white wine
salt and pepper to taste
1 red bell pepper, sliced into strips

In a deep pan over medium heat, saute the garlic in oil until lightly browned. Add the onion, stir for 1 minute.

Add the tomatoes, chicken, soy sauce and a little salt and pepper. Cook for 3 minutes. Add the wine. Cover and simmer for about 20 minutes, stirring occasionally.

Add the potatoes and carrots. Simmer covered until the potatoes and carrots are done, about 20 minutes. Taste for seasoning. Add the bell pepper, cook for 1 minute and then serve.

Nothing fancy, but simple to make and very tasty.
