For a recent BBQ, I made some cheese filled tomatoes. A bit time consuming because of the scooping out of the cherry tomatoes themselves, but a huge hit.
1 part cream cheese
2 parts goat cheese
Chopped basil (to your liking)
a little pepper
Mix together well in bowl or food processor
Cut tops of tomatoes and carefully scoop out inside with a knife, small spoon, etc (I used the end of a peeler.
And then carefully scoop in cheese mixture until you run out of tomatoes or cheese.
I topped mine off with chopped yellow bellpepper for color and texture.
Chill for about 30 minutes before serving. :)
Note: I used light whipped cream cheese which has about 70 calories per tablespoon and goat cheese which was also about 70 calories per tablespoon. I was able to roughly fit a tablespoon of the cheese mixture in each tomato, so this was quite lowcal.
