I just made a batch of these today. They are sooooooo good! And healthy too! The only thing I don't like is my waffle maker - they make such thin waffles! I need to get a new one. One of those Belgian waffle makers with big and deep grooves that can hold puddles of syrup and melted butter.

The recipe I used was originally for pancakes. I reduced the liquid to make this suitable for waffles and then sprinkled some pumpkin seeds [can't see in this pic though] after pouring the batter in the maker.

The recipe to make waffles:

Copycat IHOP Harvest Grain & Nut Pancakes/Waffles

¾ cup oats, grind to fine flour consistency
¾ cup Whole wheat pastry flour
2 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
1 cup buttermilk [I used 1 cup skim milk mixed with juice of 1 lemon]
¼ cup canola oil
1 egg
¼ cup sugar [I used Splenda]
3 Tbsp. finely chopped blanched almonds [I used pumpkin seeds]
3 Tbsp. finely chopped walnuts

1. Preheat waffle maker and lightly oil / spray the grids of the waffle maker.
2. Grind the oats in a blender or food processor until fine, like flour.
3. Combine ground oats, whole wheat flour, baking soda, baking powder and salt in a medium bowl.
4. In another bowl combine buttermilk, oil, egg and sugar with an electric mixer until smooth.
5. Combine dry ingredients with wet ingredients, add nuts [optional], and mix well with mixer.
6. Ladle enough of the batter onto the hot waffle maker and cook for 2 to 4 minutes.

Waffles can be frozen and toasted later.
