I'm telling you: this bread is so A+. I know the amount of oil is ridiculous, bust just go with it. SOO GOOOD.

Bread:
3 eggs
1 cup of vegetable oil
2 cups of sugar
3-4 mashed overly ripe bananas
2 teaspoons of vanilla extract
1 teaspoon of salt
1/4 teaspoon of baking powder
3 cups AP flour
1 tablespoon of cinnamon
1 teaspoon of baking soda


Topping:
6-8 tablespoons of butter, melted and cooled
3/4 cup AP flour
½ cup sugar
¼ cup + 2 tablespoons brown sugar, packed
½ teaspoon of cinnamon
¼ teaspoon of baking powder
¼ teaspoon of salt

-Melt butter & cool, mix in other ingredients with a fork until crumbly. Squeeze with hands and break up into smaller pieces, if needed.

Preheat oven to 325 degrees. Spray 2, 8 x4 inch pans with non stick baking spray.

In a large bowl beat eggs until light and frothy. Mix in the oil and sugar.

Stir in the bananas and vanilla.

In another bowl, combine the flour, cinnamon, baking soda, baking powder, and salt.

Pour the flour mixture into the egg mixture and mix until combined.

Divide the batter between the 2 pans, top evenly with the topping

Bake for 55-65 minutes or until a toothpick comes out clean when inserted.
