I have 1.5 dozen Omega-3 eggs to use, and had already used a bunch for a leche flan this past weekend). Craving simple Japanese home cooking, I made oyako don (aka parent (oya), child (ko) and bowl (don)) for a hearty one bowl meal. First I sauteed the onions, then I added broth (seasoned). Next was a pound of cut up chicken tenders and then simmered it all before adding a bag of washed spinach to the pan, then topping it with 4 eggs (cooking it until barely set). I scooped a hearty portion over a big serving of rice. I ensured that I generous with the hot broth that was poured over the rice and toppings before sprinkling on yuzuiri hichimi tougarashi.
