Spinach Salad

1 tsp vinegar (I used red wine vinegar)
1/2 tsp salt
hot sauce to taste
1/2 cup onion, diced
1/2 cup celery, diced
3 hard cooked eggs, chopped
1/2 cup shredded cheddar
4 cups spinach
Mix together everything but the cheese and spinach. Refrigerate for several hours. Place the cheese and spinach in a bowl. Add the dressing and mix to coat.
I thought this was pretty good, but my wife thought there was too much vinegar.
