Baked sweet potatoes with fried talipia and carrots boiled in OJ.

Take a sweet potato and peel it. Preheat your oven to 405. Cut the sweet potato into french fry shapes. Line a cookie sheet with foil, and spray with cooking spray. Spread out the sweet potatoes and sprinkle with salt, pepper and ginger. Cook for about 20 minutes.

Cut up some fresh carrots (peeled) and warm up about 2 cups of OJ over medium heat. Add the carrots, some salt and some cumin. Bring to a boil and simmer until the carrots are done as you like them.

Coat the fish with spicy mayo (about 6 tbs) and mustard (about 2 tbs) (both sides) heat some oil over medium heat and cook the fish on both sides (about 5 minutes each) until done.

Everything was delicious.

Serve everything togehter and enjoy.
