Coconut Tobasco Shrimp

Tobasco-coconut fried shrimp
For the batter:
-2 eggs
-cup flour
-1 1/3 cup beer
-2 tsp baking powder
-shotglass of Tobasco
-about 2 pounds peeled, raw shrimp
-extra flour for dipping
-shredded coconut
-canola oil for frying
Mix batter ingredients in one bowl, place extra flour and coconut in separate bowls. Dip shrimp in flour, then batter, then coconut. Set on wax paper until you've got a batch battered and oil is hot enough for frying. Fry each shrimp for 2-3 minutes, set on paper towels to drain.
Served with a store-bought plum sauce that the guests quickly added Melinda's Habanero Sauce to. Big love to Amy for helping me finish this overambitious recipe, and for snapping the photo!
