There are many, many possible combinations for this with the only constants being the bread and an egg. Put even the egg can be changed from fried to scrambled or whatever you like the best. Here are the ingredients we used this time:
Some French bread sliced in half
6 mushrooms, sliced
1/2 bell pepper, diced
4 strips of bacon
4 pieces of turkey lunch meat
1/2 cups shredded cheddar cheese
2 eggs
red pepper flakes
Heat your oven to 425 and put the bread on a cookie sheet. Once the oven is ready, place the bread in the oven for 5 minutes and then remove. Turn the oven down to 400.
Fry up the mushrooms, bell peppers and lunch meat in a pan over medium heat. Cook the bacon in the microwave until half done and then add to the mushroom mixture. Layer everything on the bread and top with the red pepper flakes and shredded cheese. Put in the oven for about 10 minutes or until the cheese is melted.
Meanwhile cook the eggs in what ever manner you would like and top off the bread with the egg just before serving. The above ingredients made two nice sized breakfast boats.
We've tried different types of cheese, onions, sausage, jalapeƱos, and even used hot dog buns once. French bread is better. A very hearty breakfast.
