Pit 2 bags of cherries, chop them up. throw them into a pan along with the juice of a lemon or 2 and the grated rind. This helps it too set. bring to a boil and cook until soft. Measure out fruit including the juice. Add 3/4 of the amount of sugar ie if you have 4 cups of fruit add 3 cups of sugar. The sugar keeps it from going moldy and it makes it taste like jam. Boil this up, stirring occasionally so it doesn't stick. When it begins to get thick ladle out a few drops onto a cold plate you have waiting in the fridge or freezer, take the jam off the heat to stop it from cooking. After a few minutes nudge the jam on the plate with you finger, if it wrinkles it is done.
