Couscous Stuffed Bells

I love how flexible and easy stuffed bells are; everyone at dinner can have different ingredients if they want them. These all have a vegetarian couscous and a topping of Asiago cheese; half have steak added.
For the filling:
-1 1/2 cup couscous
-2 tbsp butter
-diced veggies (onion, garlic, carrot, radish, red and orange bell, paprika peppers, zucchini, tomatoes, cranberries - or whatever you have)
-2 cups vegetable stock
-honey
-soy sauce
Melt butter and saute onion & garlic for 3 minutes. Add rest of veggies and cook until softened. Add couscous and toss everything together. Add vegetable stock and continue cooking until all liquid is absorbed. Turn off heat and season to taste with soy sauce and honey.
Preheat oven to 350. Slice tops off bell peppers and remove seeds and veins. Stuff with couscous. Bake for 15 minutes. Remove, add cheese and bake for 10 more minutes.
