Whole wheat fusilli pasta, roma tomatoes, lemon basil, shredded zucchini and fresh grated parmesan cheese.
This was delicious! And super simple!
Cut the tomatoes in half and place on a baking sheet. Drizzle with a touch of olive oil then sprinkle with kosher salt, ground black pepper, chopped lemon basil and a small amount of fresh grated parmesan cheese. Bake for about 20mins or until good and bubbly.
While the tomatoes are baking, boil up the pasta.
While the pasta is doing it's thing, shred some zucchini.
Toss the cooked pasta with the zucchini then add some lemon juice, more chopped basil and a little of the parmesan cheese. Mix that all up.
When you plate the pasta throw a few of the baked tomatoes on top. As you mix everything up, the tomatoes begin to break apart and form their own "sauce".
Quite good!
