Turk-a-leekie Soup

Similar to Cock-a-Leekie soup, but it doesn't have any cock in it!
Ingredients
2 leeks
200g leftover turkey (split into chunks)
50g rice
1 litre of chicken stock
1 small onion (chopped)
knob of butter
a dollop of cranberry sauce
Method
Slice the leek lengthways then chop into chunky pieces. Roast at 200°C for 30 minutes.
Melt the butter in a saucepan, add the chopped onion, cook until soft, then add the turkey, roasted leek, chicken stock and rice.
Bring to the boil, then reduce to a simmer for 30 minutes.
Season with salt and pepper before serving, then serve with a dollop of cranberry sauce.
Serves 4
