My favorite recipe for curry so far.
First, mix one cup yogurt with 1/4 cup chopped cilantro and one tablespoon lemon juice; chill.
Roughly chop one onion, a few carrots, a few tomatoes, and half a bell papper. Sauté in olive oil in a hot skillet with two tablespoons of curry powder or your other favorite spices until soft. Add 1/2 cup white wine and boil off; let cool.
Transfer veggies to a blender and purée. Set aside.
Now, prepare whatever veggies you'd like in the curry -- eggplant is really good tossed in flour and curry powder and fried; in this pic we used tofu, potatoes, and green beans.
Serve everything over rice, with garlic naan (I love Trader Joe's version) and with cilantro-yogurt sauce on top.
