1 cup lentils
1 cup "ancient grains" mix from Target (quinoa, millet, and something else...)
1 can Rotel tomatoes
3 cups diced potatoes
1 diced onion
1 cup shredded carrot
1 cup chopped parsley
1T oregano
salt + pepper
2T olive oil
Saute the onion in the olive oil and then transfer it and all of the other ingredients to a crockpot. Add 8 cups of water and cook for 8 or so hours.
Turned out great . . .
