Today is the two year anniversary of us being vegetarians! And I plan to celebrate by making the first vegetarian dish I ever made, which is lentil minestrone. But last night I was aiming for something special, and flying by the seat of my pants, I came up with stuffed puff pastry with my own marinara sauce. The filling is spinach sauteed in a little olive oil and garlic, then mixed with fresh whole milk ricotta and a bit of Parmigiano-Reggiano.
