this is a dish that John and I used to love when we ate meat and cheese. I haven't tried it in vegan style because I generally don't like the melting performance of vegan chesse. I was promised that this sheese stuff would do well though so here it is. It did turn out very well... creamy and spicy and lovely, justl like I remember it. To make it you need:
9x13 baking pan
1lb ziti pasta
mushrooms
artichoke hearts
sausage style vegan soy crumbles
sheese brand vegan mozzarella
20-24 oz of tomato sauce or crushed tomatoes
1 large onion
1 large green bell pepper
1 large red bell pepper
2 tsp crushed garlic
italian seasonings to taste
Sautee the onion and peppers until they are as tender as you like them. I cut my onion really thin and peppers thicker so that after about 20 minutes of cooking the onions are really really carmalized and the peppers are soft but not falling apart. That's the time that I add the garlic because I don't want it to burn.
At about the time you add the garlic, add your italian sausage style soy crumbles. I like to season them with some vegan worcestershire sauce and fancy salt/pepper. Cook all that through and then add your tomatoes and mushrooms and the like. You don't have to warm it through, just combine it all.
Pour this big potfull of stuff into your 9x13 and then drain and add the pasta to that. I like to add the sauce to the baking dish first because I find that if I add the pasta first, sometimes I don't have enouch room for the sauce. Combine the pasta and sauce completely and then insert 1.5x1.5 inch chunks of the vegan chesse throughout.
I like to grate a little chedder style vegan cheese to the top of the dish but it's not necessary. Bake this at about 375 for 45 to an hour; serve with vegan butter and bread!
It don't get no better, believe me.
I always undercook my pasta so that it absorbs some of the liquid from the tomato based sause while in the oven; so boil your pasta for about 10 mins.
