this was my first try at scrambled tofu. I was not expecting a good result but this turned out very well. Usually when I see a scrambled tofu recipe they include onions, peppers and spices to turn it into a spanish style dish. I was going for more southern with this recipe.
It's 1/2 block of extra firm tofu that has been cut into 4 pieces, squeezed in the hands to remove water and then crumbled. This is combined with pre cooked sausage style Morning Star soy crumbles and some canned mushrooms. There is some tumeric added as well to color. I added the tumeric to the very very lightly oiled frying pan before I added anything; this ensured that the spice would be well distributed instead of clumping to the soy it was sprinkled on. There is less than 1/32 of a tsp to give it this color.
With the scrambled tofu is hash brown potatoes and toast with earth smart butter.
totally vegan and totally delicious! The sausage crumbles gave the tofu a wonderful southern style homefood taste and the texture was right on. The only thing I can say that i didn't like about scrambled tofu is that you had to chase it around the plate a little more with you fork than you would have to chase scrambled eggs. Of course, no animals harmed here though so it's a fair trade!
