I think I'm in love with okra!

This week was my first time cooking with okra and so far I have been pleasantly suprise how versatile it is.

Ingredients:
Tomato (a mix of yellows and reds)
Okra
Firm tofu

Dressing:
Shallots (2 to 3 cloves)
Balsamic vinegar
Honey
Olive Oil
Ground black pepper
Salt


1. Place tofu in either the oven, toaster oven, or even on the grill to cook. Cook until tofu develops a light golden brown color on top. Cut into cubes.

2. Cut tomato and okra, set aside. If you're not a fan of the taste of raw okra, blanch the whole okra a few seconds in boiling water, drain and rinse under cold water, and then slice.

3. Thinly slice the shallots and place half in a pan with olive oil. Keep the flame low since you are not trying to fried the shallots. When shallots become transparent, add the rest of the shallots in the pan and remove from flame.

4. Mix balsamic vinegar, shallots from the pan, honey, and more olive oil if needed in a bowl.

5. Season dressing and salad with salt and pepper.
