Tofu Scramble & Tully's
(Not Starbucks, it will ruin the whole breakfast)
1lb firm tofu
1/2 medium onion, chopped
1 red pepper, chopped
1 tbsp black pepper
1 tbsp chili powder
1 tbsp salt (optional)
Mild Salsa (as much or as little as you can handle)
1/2 avocado for every serving
1/2 roma tomato for every serving
1/2 c spinach for every serving
cooking oil or pam
1. Cut tofu into cubes, place in large bowl
2. Sautee onion in a little oil and spices. Do this until the onions turn translucent.
3. While you've got your sautee on, add red peppers to the tofu cubes and start mashing.
4. Fold onion/spice mix into the tofu pit, and keep mashing. You want your tofu to be about the consistency of scrambled eggs, hence the TOFU SCRaMBLE.
5. Throw that mix in a frying pan and heat thoroughly. You might not want to burns this, it tastes bad.
6. lay a bed of spinach down for each serving on a plate.
7. on top of spinach, put a layer of thinly sliced tomato
8. throw down a layer of salsa
9. put one scoop of tofu mix on top of your layered dream
10. put one more dollop of salsa on top of tofu mixture (yes, salsa does "dollop")
11. accessorize your food with a few sliced of avocado on the side, and some cubed 'cado on top of the last salsa layer.
makes 4-6 servings depending on how big of an eater you and your pals are. (it makes plenty is what im really trying to say)
