easiest recipe evar- i came across it in Good Housekeeping in college and have made and adapted it ever since.
1 jar Marinara/Pasta sauce
1 container cottage cheese
lasagna noodles-uncooked!
1/2 eggplant, sliced (or meat sub of your choice - or hey, even turkey if that's your bag)
1 bag shredded mozz.
Layer ingredients, cover in foil, bake @350 for 60 min. Remove foil for last 10 min.
I like to add some Emeril's Essence and cracked pepper on top w/ some Parm before baking.
