This one I threw together centred around eating some Chinese greens I bought at the open market before they wilted.

Ingredients:
Handful or 2 of raw almonds
1/2 bunch shanghi bok choy
1/2 bunch gaai laan
1 small onion
2 T fish sauce
1T soy sauce
3 cloves Garlic
2 handful of fresh handmade noodles
1/2 fresh coriander
3 mild chilies
One large portobello mushroom (or shitake)
2t sugar mixed water
1 lime
Rice bran oil (ad lib)
Water (ad lib.)

Almonds are roasted under grill

Sauce pan with oil will chopped onion.
Add sliced mushroom
Add greens, chopped garlic, sunflower seeds
Water enough for steam but not to loss heat

Add fish sauce, soy sauce, sugar water
Cover for 5mins
Check almonds aren't burning, when done, chop
check green are how you like them
turn off heat
add noodles
cover so noodles are same temp as dish (2 min)
stir
serve
sprinkle chopped almonds, coriander and lime on top.
serve while hot
