Chocolate Covered Strawberries

These are temperamental as far as Valentines Day surprises are concerned. I scorched two batches of melting chocolate, and then I stored them for two days in the fridge. EW city. They berries all condensated and were soggy and gross on Valentines Day. That's What a girl gets for trying ;)
Here's how I finally made it work:
1 lb fresh strawberries. keep the stems on. Washed and thoroughly dried. I cannot stress the drying enough here, people.
8oz semi-sweet chocolate chips
8oz milk chocolate chips
you will need:
waxed paper
double boiler
instructions instead of guess work, trust.
boil water in bottom part of double boiler
turn water down to warm/low
place top part of double boiler loaded with chocolate on top of boiling water
stir until chocolate is melty and glossy
dip those berries into chocolate and place them on wax paper. do this quickly.
rinse and repeat.
not too hard, eh? well, i am a brainiac, and didn't learn to turn the double boiler down to very very low before adding the chocolate to be melted.
