1/2 red onion, sliced
4 beets, cleaned and sliced
tbsp peppercorns
1/4 cup EVOO

Roast until tender, 400 degrees, 45 minutes.

1 cup Romaine
1 cup arugula
1 cup roasted beets
1/2 cup chopped tofu (firm) 0r tofu feta
1/4 cup toasted hazelnuts
1/2 cup blueberries

1/4 cup EVOO
1/2 cup rice vinegar
Salt
Pepper
3 tbsp agve syrup

Mix and pour over salad

Serve warm
