When my mom goes to a restaurant and likes a dish very much, she analyses what's on her plate. This is an old recipe she 'sole' from a great vegetarian restaurant, Grietje Rietmeijer, we had in town years ago.
It's very simple and great for summers.
Cut potatoes in quarts and boil. (Don't overcook)
Fill mushrooms with creamcheese with herbes (i.e. Boursin)
Chop tomaoes
Chop garlic
Place all in an ovendish
Add herbs: thym, basil,salt & pepper
Sprikle with cheese
Place in oven for 15 minutes.
