Tacos- Refried Pintos and Rice Cheeze
Bean "Dip":
1 cup pinto beans, rinsed and soaked overnight.
1 onion, quatereed
1 Serrano chili,split and seeded
1 clove garlic
6 cups vegetable broth
1 tbsp coriander
1 tbsp cumin
1 tsp paprika
Salt and Pepper
Bring to a boil, lower heat and simmer several hours.
Puree in processor- add 1/2 cup Tofutti and blend well.
Adjust seasoning and scoop into bell peper halves- heat until warmed through.
Yum.
