Recipe to follow.
1 bunch collard leaves, stems removed and sliced
4 sheets nori seaweed, toasted and cut into strips
4 ounces soba
6 teaspoons sesame oil
1/2 red onion, sliced
1 cup baby carrots
10 fresh shiitake mushrooms, sliced
1/2 teaspoon sea salt
Juice of 1 lemon
1 tablespoon tamari to taste
2 tablespoons toasted sesame seeds
Steam the carrots and greens until ala dente. Drain. Cook soba in water- bring to a boil and cook 4 minutes- drain.
In wok, heat sesame oil and sea salt - stir fry mushrooms, onions, carrots and greens-add soba, sesame seeds and lemon juice. Add tamari to taste.
Add nori and stir. Serve.
