Steam fresh asparagus with some lemon.
In a jar combine -
3/4 cup flour (any)
2/3 cup oat milk
2 tsp ground flax seed
1/3 cup water
1 tbsp baking powder
Shake until mixed. Makes about 4.
Oil a crepe pan and make crepes- stuff with the asparagus and drizzle with the Hollandaise.
Perfect dinner, just add a salad.

Hollandaise:
3/4 cup Toffuti sour cream (if you cannot get, try silken tofu)
1/3 cup soy creamer
1 tbsp fresh lemon juice
1 tbsp EVOO
1/2 tsp sea salt
1 saffron thread

Soak saffron in creamer. Place all in a blender. Makes about 1 cup.
