When you do not have time to make your own, this stuff rocks!
But when you have the time...
My version...I call it the Bestchester:

½ cup apple cider vinegar
1 cup water
¼ cup molasses
3 tbsp tamari
2 cloves garlic, pressed
Lemon juice from one lemon
Pinch of sea salt
Dash of cayenne pepper
1 tsp grated ginger root
¼ tsp coriander seed
2 tamarind pods
¼ cup fresh shiitake mushrooms, diced
Dash of allspice
1 clove, pulverized
Pinch of mustard powder
3 tsp liquid smoke
3 tsp safflower oil infused with orange zest


In skillet heat oil, add the allspice, clove, coriander, ginger root, garlic, mustard, salt and pepper. Sauté the mushrooms 1 minute then add the liquid smoke and finish the sauté process. Set aside.
In sauce pan heat over medium flame water and molasses with the tamari. Add the tamarind pulp. As it begins to boil add the mushroom mixture and then add the vinegar. Bring to a boil again.
Remove from heat and adjust seasoning as desired. Cool. Strain the sauce- it’s the best!
