I made a whole bunch of samosas today...super tasty, vegan. Yes, I fried them in safflower oil but I rarely eat fried food so...woo! :)
Edit: When I cooked a few of the leftovers the next day in the microwave, they had this texture almost like Chinese eggrolls! How insane is that? I mean, you know how they usually have cabbage or mung beans in them, and that gives it this stringy texture? Well, even though there is nothing like that even remotely close to being in this, I was still left with that mouth-feel. Odd!
