Spicy, Sweet and Savory!
Recipe to follow:
Trim corn from 4 ears
1 large jalapeno pepper, roasted and seeds removed, diced
1/2 red bell pepper, chopped and diced
1/2 yellow onion, diced
1 tsp mustard seed
1/2 cup vinegar
1/4 cup agave syrup
1/2 tsp sea salt
1 tsp black pepper
1 tbsp tarragon, chopped
Place all ingredients in sauce pan over medium flame and bring to a boil - reduce to a low flame and simmer until corn is tender, 7 minutes or so. Cool. Refrigerate. Makes about 2 cups.
