My very own recipe, extremly delicious! I was really impressed by what it came out! It's chewy on the inside and crunchy on the outside, with a wonderful lemon-pecan flavor. Wow, I love it!
Ok, dear friends, here's the recipe:
RAW PECAN COOKIES (for ~ 13 pieces)
- 1 C pecans, raw and unsoaked
- 1 pinch of sea salt
- 1 C almond flour or butter
- 1/2 C coconut flakes
- 1/2 C maple syrup
- 1 tsp pure vanilla essence
- 1 Tbs lemon juice
Place the pecans and the salt in a food processor fitted with the "S" blade and process until finely ground. Add the rest of the ingredients and process to incorporate.
Using a tablespoon, form equal sized balls and flatten them using a glass. Dehydrate at 115 F until they are firm on the outside but soft and chewy on the inside.
