White Bean Tomato Soup with Cranberry Glazed Sietan

Recipe to Follow:
1 lb white beans
2 tbsp EVOO
2 onions, chopped
4 tomatoes, peeled, seeded, and chopped
Basil, 4 sprigs, minced
Oregano, 2 sprigs, minced
Parsley, 3 sprigs, minced
2 bay leaves
2 cloves garlic, crushed
8 cups vegetable stock
Sea salt
Black pepper
Saute the onions and garlic in the oil.
Place all ingrdients in stock pot and bring to a boil- lower the heat and simmer 2 hours until beans are tender. Puree in batches. Feeds 8.
Seitan - glaze in your favorite cranberry sauce and then bake 20 minutes, basting frequently. Seitan recipe on a previous post.
